I’m forever making batches of oat-based bars for breakfast and/or fuel on our bike rides. I tend to regard the ingredients as being pretty interchangeable, depending on what I have in the cupboard.
1. Preheat the oven to 150ºC/ 130ºC fan/300ºF/gas mark 2 and line a 500g (1lb) loaf pan with greaseproof (parchment) paper overlapping sides. Stir together nut butter and nectar in a medium-sized mixing bowl until smoothly combined. Add all the other ingredients and mix well.
2. Spread mixture evenly in prepared pan and use damp fingertips to press into pan. Bake for 25-30 minutes until lightly golden. Cool bars completely to room temperature before slicing into either four or six bars – how easy was that?

I have never heard of quinoa in a bar. I am going to make these, so much healthier than getting them in a box…
