The Musette: Avocado and citrus salad

This avocado salad is a deliciously refreshing twist on guacamole, and makes a perfect accompaniment to fish or even a Summer barbecue. I typically pair creamy, crushed avocado with orange or pink grapefruit segments to create a perfect balance between yummy richness and zingy citrus.

Ingredients (serves 6 as a side)

  • 3 ripe avocados, halved and de-stoned
  • 4 spring onions (scallions), finely chopped
  • 2 oranges or 1 pink grapefruit, cut into segments
  • juice from 1/2 lemon
  • 2 tbsp virgin olive oil
  • sea salt and freshly ground pepper, to taste

Method

1. Scoop the flesh out of the avocados into a bowl with a teaspoon and crush it gently with a fork. Keep hold of the skins for serving or use similarly sized dish to serve.

2. Season avocados with the lemon juice and a pinch of salt and pepper, then gently stir in the spring onions, olive oil and citrus segments.

3. Scoop the mixture back into the avocado skins (or small bowls) and serve immediately. How simple was that?
